Major enzymes activity is provided by Neutral Protease that hydrolyzes protein molecular chains to produce Amino Acid and low molecular weight peptid.
Activity Definition of 1μ/g activity:
1 gram enzyme hydrolyzes casein to produce 1μg tyrosine per 1 minute at pH7.5 and 40℃.
