Major enzymes activity is provided by Acid Protease that cut the peptide bond in amino acid to produce small peptides and amino acid.

Activity Definition of 1μ/g activity:

1 gram enzyme hydrolyzes casein to produce 1 ug tyrosine per minute at pH3.0 and 40℃.
