Major enzymes activity is provided by Fungal Alfa-Amylase that hydrolyzes α-1,4 glycosidic linkages of amylose and amylopectin to produce maltose, less maltotriose, glucose, and oligosaccharide.
Activity Definition of 1μ/ml activity:
1 ml enzyme hydrolyzes soluble starch to produce the reducing sugar (quantity equivalent to 10 mg glucose) per 30 minutes at pH5.0 and 40℃.
