Major enzymes activity is provided by Pullulanase that hydrolyzes pullulan, amylopectin and α-1,6 glycosidic linkages to speed up and improve the content of glucose and maltose..
Activity Definition of 1μ/g activity:
1 gram enzyme solution liberate soluble starch to produce 1 mg glucose (reducing sugar) from pullulan per minute at pH4.5 and 60℃.
Major application:
1. Glucose/Crystalline dextrose
2. Alcohol, Beer，MSG, Vinegar, Soy Sauce, Rice wine, Citric acid, etc
3. Organic acid(salt) with glucose
4. Maltose higher concentration
