Major enzymes activity is provided by Pullulanase that hydrolyzes pullulan, amylopectin and α-1,6 glycosidic linkages to speed up and improve the content of glucose and maltose.
Activity Definition of 1μ/ml activity:
1 ml enzyme solution liberate soluble starch to produce 1 mg glucose (reducing sugar) from pullulan per minute at pH4.5 and 60℃.
