Mayjor enzymes activity is provided by Glucoamylase that hydrolyzes α-1,4 glycosidic linkages of starch from non-reducing end to produce glucose.

Activity Definition of 1μ/ml activity:

1gram enzyme hydrolyzes soluble starch to produce 1 mg glucose per hour at pH4.6 and 40℃.
